Bread Making 101
Learn the basics of baking bread. We explore flour types from soft winter wheat to OO, instant yeast to sourdough (and poolish in between), and some common types: ciabatta, focaccia, boule. If those words don't make sense to you, then this is the course to sign up for! If they do, then come hone your skills! We'll also nail down a few of life's sine qua nons: cookies and cinnamon rolls. What's a Latin teacher doing teacher baking? Mr. Schellack built and ran a commercial bakery in Highland Park, New Jersey before selling it in 2022; he has also been baking on a weekly basis and has been doing so for over a decade. The course may include a trip to harvest winter wheat, grind it, and use it.
